Époisses

Sam is back from Jersey so last night we sampled some of the extremely smelly Bourgogne cheese we bought at the salon d'agriculture last week. After a week in the fridge it has matured nicely. A little research reveals we broke the law in bringing it back from the salon - it's so smelly it's actually illegal to carry on public transport. It turns out the taste is a lot less strong than the smell - in fact it tastes sublime and has a very well balanced flavour and texture - quite strong, not too tangy, mostly smooth but a little crumbly. It's great. Though ideally, you would have a separate fridge to keep it in - it's a bit hostile first thing in the morning when you open the fridge for a yoghurt.
