I went pretty early to the marché Richard Lenoir this morning and bought a line-caught sea bass: they're more than twice the price of the farmed or trawl-caught stuff unfortunately, but they look incredibly fresh and of course you have the pleasure of knowing that they're cuaght sustainably, without by-catch. In France they have a scheme where genuine line-caught fish are tagged around the mouth with a unique number which you can look up online and find out who it was who caught your fish and where. Mine was caught by a M. Rauol fishing from his 8m fishing boat around the islands off the pointe de Bretagne.. this has already added to my enjoyment of the fish without even tasting it.
